Vito Marcello is owner and Chef of Bellini’s Ristorante in North Conway, New Hampshire, in the heart of the Mount Washington Valley. Over the past TBD years, Chef Vito and his family have earned a reputation of being one of the finest Italian restaurants north of Boston. The restaurant’s success is based on serving authentic Italian food and wines derived from traditional Italian family recipes handed down to him from his father and grandfather. Vito keeps his menu exciting and authentic by creating new dinner specials using his extensive and frequent travels back to his roots in Italy. His most recent trip to Italy included touring with Chef Andrea Alimenti (GUSTO 66) and cooking with the Italian culinary team experiencing the Italian passion and creativity for their culinary art. While recently in Tuscany, Vito represented the United States as the Wine Chef at the Arezzo Wine Show where he created and prepared a delicious and healthy Sautéed Scallops with a Cherry Tomato Salsa dish that received rave reviews from the Italian press and attendees. This recipe is representative of Vito’s goal of producing healthy and tasty gourmet foods and continues with his line of sauces and soon to be announced dressings. The Vito Marcello Tomato Basil Marinara sauce has earned a 3 Star rating at Hannaford, the only 3 Star sauce in their extensive sauce section.
